For the Jacket Potatoes

Method
 

  1. Step by Step Instructions:
Step 01: Bake the Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes under cold water.
  3. Dry them well with a clean towel.
  4. Rub each potato with a little olive oil.
  5. Sprinkle salt on all sides of the potatoes.
  6. Place them on a baking tray.
  7. Bake for 45–60 minutes until fully cooked.
  8. Check if it is soft by piercing with a knife.
Step 02: Make the Chickpea Curry
  1. Heat oil in a pan on medium heat.
  2. Add chopped onion and cook for 5 minutes.
  3. Stir in garlic, ginger, and dry spices.
  4. Cook for 1 minute to release the flavors.
  5. Add chickpeas and chopped tomatoes to the pan.
  6. Pour in the coconut milk (optional).
  7. Season with salt and pepper to taste.
  8. Simmer for 10–15 minutes while stirring often.
